Conductivity Level Sensor
Stainless probes at the levels that matter — simple, wired and instant.
Stainless-steel probes hung at set levels in the tank. Water conducting between them tells the controller which levels are wet, over a direct wired connection — the classic way to start and stop a pump on level.

The classic level sensor
Stainless probes hang in the tank at the levels you care about — the start level, the stop level, an alarm level. Water conducts between them, so the controller knows directly, over copper, which levels are wet. Simple, instant and nothing to pair.
When the tank and the controller are close, a wired sensor like this is hard to beat. When they are far apart, read wired vs wireless water level sensors.
